Currently Yours

So I got curious and paused the satellite feed of the Current TV Channel for a few hours and then fast forwarded until their "Current Podcast-atastic" segment showed up. It didn’t take long. It was a nice 30 second promo for this show and two others. A brief audio description of the show, a mention to hit this blog and view the photos, and all the while the web address was on screen. Nice! Maybe because I’m West Coast, and they’re LA-centric?? Don’t know. But it’s great to be one out of 43 so-called food shows and even more–one out of 7000 podcasts–and even get a mention on this hip so-new-as-no-one-has-heard-of-it TV station, at least two days in a row. I have LA connections, but I’m still trying to find out if they came into play on this one or if it was just a lucky dip in the podcast pool.

Gastrocast #20

Gastrocast #20 is out, with 50% less “Ums”. This jam-packed episode begins with a soundseeing tour of the cooking oil isle in the local organic Co-op and ends with a lengthy rant, again, on cooking oils and baking a berry cobbler. In between find thoughts on a recent cooking gig I had and a review of some radical food ideas in Yoga International.

*Despite what this chart says, I’d still hold to the use of Extra Virgin Olive Oil, or Grapeseed Oil–unrefined–for high heat cooking.

Remember–the hotter the pan is, the less oil you really need. Most foods we sear have fat of their own to release and lubricate–the oil is there as a medium of conduction, more than to keep things from sticking–the heat itself, and how it reacts with protein does that. If a piece of meat sticks, chances are the pan was too cold, or not enough time has elapsed to allow the protiens to draw back and pull away from the pan to release the meat.

Podcasting goes Current

Never heard of the station before, but Current TV mentioned the Gastrocast, and two other Podcasts on air today! Guess it’s time to set up another subject catcher in the DVR. Now I just wish I knew what they said. . . .It’s a bit freaky knowing Al Gore is involved and he has been in the neighborhood where I live before and I was just speaking with people in the know about his last visit. . . .It might not sound too odd, but I am in the MIDDLE of no where, so it’s a bit unbelievable. I only wish I’d had the chance to cook for the man–things might be better. . . . Props for the mention tho!
